Hi Guys and Happy Monday! Last week I mentioned that I am going to start throwing in Weekend recaps here and there to share outfits, recipes, what we have been up to and more. I used to write these diary type posts all the time back in the day and I loved doing them! I have some adorable outfits and fun posts coming this week too!
So the weekend. We started off Friday hanging out at my moms house for chili and vino. About a year ago my mom and I made up a quick and easy recipe for White Chicken Chili and it turned into one of our go to recipes! I made it on Friday night on my stories and you guys asked for the recipe in written form so here you go! We also made a S’mores dip that was INCREDIBLY easy. We kinda of made it up and went for it haha. It turned out Divine so I added that below too!
White Chicken Chili
Ingredients
1 bag of frozen Cooked Chicken (we used the pulled chicken)
1 can of corn
1 small can of diced green chilis
3 cans of white beans
1 package of White Chicken Chili Seasoning
1/2 onion chopped
2 Cups of Water
Garnish
Avocado
Sour Cream
Cheese
Tortilla Chips
Instructions
1. Cook onion with evoo until brown.
2. Drop Chicken in and cook for 1 min
3. Add Beans, Corn, Green Chilis and seasoning. Stir together and then add in two cups of water.
4. Simmer for 30-45 min
5. Top with Garnish and enjoy!
S’mores dip
Ingredients
6 dark chocolate Hershey bars
1 large container of Marshmallow Cream
Graham Crackers
Instructions
1. Layer all the chocolate on the bottom of a small baking dish.
2. Dollop Marshmallow cream over the top (it does not need to be perfect as it will spread as it melts)
3. Cook in a 350 degree oven for about 2-3 min (until melted)
4. Broil the top for about 25-30 seconds to toast.
I got in a few Amazon finds this past weekend and have a bunch headed my way! I plan on doing monthly favorites, but you guys flipped over this dress, so I wanted to go ahead and add it in todays post! I plan on doing a style series soon with this cute dress so stay tuned!
Olivia has a HUGE week this week! This weekend is her very first competitive dance competition! She has been working SO hard and it makes me so happy to see her thriving in dance. She absolutely LOVES it and LOVES performing. She has 2 dances this weekend and we have a dress rehearsal this Wednesday. I can’t wait to share with you guys her costumes and dances soon! eeeek! A HUGE blessing is that my nieces are also in the same dance company. Olivia is in a dance with them too that will be performing at a future competition. It is reassuring to have my nieces there guiding Olivia and being such wonderful role models. They both are extremely talented and I can’t wait to see their dances too. The company colors are red and zebra, so get ready for some fun animal print finds over the next couple of months. We usually grab dinner after dance class and it is Olivia’s favorite to hang out with her cousins.
We have a trip coming up in the next couple of weeks to escape these frigid temps! I am taking my mom somewhere she has always wanted to visit! Any guesses? We are also planning our first beach vacay and we are still narrowing down where that will be! My annual travel post will be on this week so stay tuned for that!
