Fried Food…

Confession- I don’t like Fried Chicken…… yes I am from the south….. yes I know this is crazy….
I normally stay away from fried food period, it is just not appealing to me. So when Drew asked me to make these squash fritters, I really was not too excited. Well being the best Most fabulous wife ever, I decided to make these for him on tuesday. So I called him up and he sent me the recipe that he saw. I had a little giggle when I saw the recipe said that they were a light alternative to french fries….. uh huh SURE! Now this was a process. Grated 4 pieces of small squash, letting it sit in a cheese cloth(yeah didnt know what that was) then squeezing the water out of the squash (GRRRROSSS) Then frying bacon (note to self, do not fry bacon with a sports bra and shorts on, you will get burned). The recipe called for Goat cheese, I quickly changed that to Colby and Monterrey jack. So I whipped up the batter and got the grease(ick) hot and started to fry these suckers. Of course I had to try them first before I let him, just to make sure they were good.. and OH….. MY…. GOSH… I LOVED them! So I let Drew take a bite and his response was…”Oh yeah!” haha. I probably will not make these on a regular basis, but I think my stomach enjoyed that little party. haha.
Here is the recipe.
Squash Fritters
2 medium squash, grated (about 1 1/2 cups)
3 eggs
1/2 cup breadcrumbs
1/2 cup flour
1/4 cup milk
1 small garlic clove, minced
3 strips of bacon, cooked, diced
4 oz. Colby and Monterrey Jack
Small handful of parsley,chopped
salt & pepper to taste
1 1/2 cups canola oil, for frying
Grate the squash and allow it to sit in a fine mesh strainer lined with cheese cloth for at least 20 minutes. Gently squeeze the extra liquid out of the squash and set aside. In a medium bowl, beat the eggs. Add the breadcrumbs and flour to the eggs, whisking to get out any major lumps. Whisk the milk into the egg mixture. Add the squash, garlic, bacon, goat cheese and parsley to the mixture, and stir to combine. Salt and pepper the batter to taste.
In a large frying pan or Dutch oven, heat the oil to about 350Β°. Using a small ice cream scoop or soup spoon, gently add the fritter batter to the oil in dollops, being careful not to let them touch. Brown the fritters on both sides, flipping them once. Remove from the oil when browned and allow them to drain on a paper towel.
We have an exciting weekend ahead…. you all know THE FASHION SHOW IS TMRW! I am pretty excited, yes still have those nerves, but more excited than anything! Then we have the first home Razorback Football game!…. oh gosh I need to figure out what I am going to wear to that haha..

    I'm not normally a fan of fried food, but I'll confess that I love fried chicken. I'm contemplating doing one of the baked "fried" chicken.

    the fried fritter things sound really yummy!!
    i was also cooking in a sportsbra and shorts a few nights ago and grease splashed on my tummy, that really hurts! ha!

    Good luck at the strut! I wish I could go so bad but we can't be out 2 nights in a row and are tailgating and going to the game all day Saturday! I can't wait to see pics sweetie pea!
