Two Sicklings and French Onion Soup!

hey guys! Well I have been staying busy taking care of everyone in my house. Drew came down with a bad cold/allergies and Miss Sadie woke up this morning limping.

I know I am not alone when I say when Men get sick, it is like a kid getting sick. I even think most men will admit(wait what am I saying haha) heck no they wont admit it, but they act like babies when they are sick! haha.

Then to top it off, my “Baby” was hurt! Cue Tara going into mommy mode. I inspected Sadies leg for anything out of the ordinary. Couldn’t really find anything so it was a trip to the vet we go. Sadie FREAKS out at the vet. I swear she knows where we are going even before we get there. The vet took a look at her and came to the conclusion she jammed her poor little leg. So meds and some TLC. PHEW. I of course thought my little girl was really hurt! Sadie really milked it thought, typical little rascal dog : )

So when I got home I already had it in my mind to make some comfort food. Drew and I love French Onion soup. I thought I would give it a try. I looked up lots of recipes and combined a few and cooked up an amazing soup. I basically went off the incredible Pioneer Women’s recipe but changed it up just a bit. She rocks! It took me about 2 hours to make it, so you need to start early! I also made Drew some italian porkchops, cornbread stuffing and green beans because I knew the boy needed to eat to get better, so the 2 hour wait was not excruciating : )

So of course I cant talk about this soup without sharing the recipe! I took pictures as I went too : )

1 stick of butter
5 medium onions
1 cup(BIG cup)of chardonnay
4 cups of low sodium chicken broth
4 cups of beef broth
2 cloves of minced garlic
3-4 dashes of Worcestershire Sauce
1 loaf of French Bread
Gruyere Cheese Block
3 Sprigs of Thyme

Preheat oven 400 degrees

Cut onions in half and then cut in thin slices(not too thin but thin)

Melt butter in soup pot or dutch over on medium/high heat. Add onions and toss in butter and cook for 20 min. Place soup pot into oven and crack the lid so the onions can brown. Cook for 30 min and then stir onions. Then cook for another 30 min. If the onions are not a nice shade of light brown/brown cook longer.

When onions are done, place back on stove on medium heat and cook for about 4 min. Then add the glass of wine(turn off heat before and then turn back on) Cook the wine until it reduces(about 5 min) Next, add both broths. Then add the dashes of Worcestershire and minced garlic. Add the springs of Thyme. Bring to a boil and then reduce to simmer. Simmer for 30-45 min. Remove the Thyme after done simmering.

When the soup is about done . Butter the ¾ inch slices of frech bread and broil on low for 3-4 min and then broil on high for 1-2 min. If you do not have ramekins, add the shredded gruyere right before the bread is done in the over and melt. If you have ramekins, place the crispy French bread slice in the soup and cover with the cheese and place in the oven to melt.

I had to grab some tissues before cutting these guys haha!

    I'm not a huge fan of F.O. soup, but I have to admit that looks good!
    And my husband is beyond BABY when he is sick! 🙂 They know we are suckers for them when they need us!

    O-M-G! I totally made French Onion Soup Sunday!! But you were way smarter than me for grabbing tissue before you started. I was halfway through with chopping onions and just started boohooing…all the animal babies in our house thought something was wrong! *lol* It was so yummy, but I think I put in a bit too much wine. 🙂

    I hope both of your babies get well soon!
