Summer Shorts and My Go to Summer Recipes!

I love a good pair of shorts. Honestly shorts are pretty much a pain to shop for. When I think about short shopping I literally give that awful cringe emoji and pour myself a glass of wine. I do most of my shopping online and it’s like the lottery when ordering shorts. Most of the time they come in, they are small enough to fit my 12 year old niece! She is thankful though, she gets a lot of my “I can’t wear that!” packages haha.

Insert High Waisted Shorts…

When I find a pair of high waisted shorts, my interests are automatically peaked. High waisted shorts accentuate the smallest part of our waist and 9/10 times they are super comfortable too. I saw this striped pair by Mimi Chica and added them to my closet in a snap. I typically would go for the black striped pair, but I knew I would wear this neutral tan more this summer. The fit of these are on point and I love the addition of the tie at the waist. Bell sleeve tops are a huge trend this season so I was excited to find this adorable top for less than $40! I did size up one size because it is more of a crop design. It ended up being the perfect length to tuck into the shorts.

A lot of you asked me to post some “go to” recipes after this post, so I thought I would share a couple summer ones!


Summer Cucumber Salsa

1 Cucumber peeled and chopped

1 tub of Cherry Tomatoes Chopped (cut in half or in 1/4s)

2 Avocados Cubed

1/2 red onion chopped

1 tbsp of cilantro chopped (add more if you LOVE cilantro!)

1 lime (the juice)

Garlic Salt to taste

*This is one of my go to salsas all summer long! Combine all the ingredients and serve over tilapia, as a side with tortilla chips and I also love it on a salad.


Salmon Salad

I get asked about this recipe more than any other thing I make, but thats probably because I post it on my snapchat often. It is nothing super special but here is what I put on my Salmon Salad

1 Piece of Salmon- I season with pink sea salt, pepper and lemon juice

1/4 cup of slivered almonds

1/2 roasted red bell pepper- cook on broil for about 2 min on each side(be sure to watch if your over cooks super fast.) Let it cool down and then peel the skin off. I then chop it into slices.

1/4 cut or less of crumbled Goat Cheese

4 roasted asparagus stalks

Kale and Spinach Mix

Balsamic Dressing

I assemble my salad by starting with the lettuce mix, then sprinkle the almonds and goat cheese, lay out the peppers, top with the salmon, an then stack the asparagus stalks on top of the salmon. Sometimes I chop up my asparagus and toss the salad in the dressing and then top it with the salmon.


Drew’s Tacos

*This is not the healthiest of dishes, but its delicious! We love Mexican food in our house so we probably eat this at least once every other week.

1 Chorizo Sausage- you will remove this from its casing and cut into pieces

1 chicken breast cubed.

Pepper Mix- Green and Red Bell Peppers, Poblano Peppers, Jalepenos (no seeds!)- all chopped into slices

1 yellow onion- cut into slices

Taco Seasoning of Choice

*In a large skillet start sautéing your onions and peppers. I cook mine on high heat for a couple of minutes and then lower to medium heat for about 10-15 min. Depends if you want your mixture to be caramelized a bit or more crispy(less time.)

*In a medium skillet brown the chorizo sausage and chopped chicken with a bit of taco seasoning (the chorizo will give this dish most of its flavor so you will not much!) Cook until chicken is done. Takes about 10-12 minutes

Serve in blue corn hard tacos (if you can find them! They are my fav with this dish) We usually top with avocado and a bit of cheese too.
