When I met Drew we went to about A MILLION weddings. I mean it seemed like one every single weekend. I am not complaining, this girl LOVES weddings. Well all of my close friends are not married yet, a few I think will be in the next few years and can I say… I am ready to start planning some parties! Jessica.. Well my lovely friend Jenn, which is my co workers fiance, is getting married next month! We have become best friends quickly. When I first started at Unilever I would be talking to Andy and he would mention all the time how we are so much alike and we HAVE to meet. Well we hit it off the first time we hung out. Andy and her moved far far away from home to Arkansas and all her friends/bridesmaids are not here to throw her a bachie/lingerie shower so I jumped on the chance. I have been yearning to throw a bachie party for some time haha. I am not going to go into details really, you will just have to wait and see the pics on monday : ) The theme is lavender and lace, how girly yet sexy is that! I have been running around town like crazy getting everything and anything lace/lavender. I have been quite crafty too I must say. Here is an iphone teaser pic. I did a mock mini table tonight to see what else I needed to pick up. : ) Ignore the pink flowers, I just used my gossip girl bday flowers to see how many i needed to fill my vases I made. I am SOOOO excited!
I made Chicken Piccata tonight and boy was it yummmmmy! I used Giada’s recipe but added lots of veggies and penne pasta and maybe some garlic…..I always add garlic. Drew loves Chicken Piccata and I think this will be added to our list of go to recipes.

Ingredients
2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
All-purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup capers, rinsed
1/3 cup fresh parsley, chopped
1 zucchini
1 squash
2 roma tomatoes
penne pasta
parm cheese
Directions
Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.
Into the pan add the lemon juice, stock and capers,zucchini, squash. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken/veggies to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and pasta and garnish with parsley,tomatoes, cheese.
Well the rest of the week is pretty darn busy. I have a pedicure date with some besties, a Launch Party for work and of course the bachie party! Busy Busy… just the way i like it : )
